|Fish fries serve up home cooking,

|HOUSTON - “Our lead fish chef begins preparing the farm-raised catfish and we have some volunteers begin the breading,” said Kevin Bradford, Knights of Columbus Council 12955 Grand Knight. “We use a special blend of breading and seasonings to make our catfish taste delicious. After the oil in the fryers is to temperature, we begin frying the fish, fries, hush puppies and breaded shrimp.” The deliciousness hopping into the fryer that Bradford is talking about is at St. Edith Stein Catholic Church in Katy. St. Edith Stein is one of the many churches in the Archdiocese of Galveston-Houston to serve up fish dinners to the community on Fridays during the Lenten season. This tradition in the Catholic Church is looked forward to by parishioners and community members who get to benefit from the good eats and support their local parishes at the same time. So what exactly goes into putting on a fish fry? Bradford, with St. Edith Stein, Grand Knight Hugo Peña, with Christ the Redeemer (CtR) Catholic Church Knights of Columbus Council 8771, and Gary Maly, with Prince of Peace Catholic Community (POP), will help us understand the effort and volunteerism that goes into making this tradition a reality.|

From wood collection to setup to all night and day cooking and serving or clean up, many thanks to all volunteers who helped make the Super Bowl Brisket cooking a success. We cooked 85 briskets (slowly) and enjoyed the weather which for a change smiled upon us (with the possible exception of a breeze from the South which cooled off the pits).
On January 31st we invited members of our clergy to the Diocesan Clergy Appreciation Night in Stafford Texas. His Eminence, Cardinal DiNardo addressed a crowd of over 1300 priests, deacons, nuns, religious and lay Knights and their wives. Fr. Kulma and Deacons Larry, Leonard and Sam joined us as our Council thanked them for their dedication and service to the Faith and our own community of St. Edith Stein. The Cardinal thanked the Knights for their service to the community and stressed the important role we play in our society.
